I have a lot of white wine to use for cooking. It was opened April 3, 2007. Is it still safe?

Since wine is opened and again exposed to oxygen, is susceptible to putrefaction. But perhaps a simple taste test is all you really need. Is it too acidic (like vinegar) if not, enjoy. Acetobacter aceti shows the alteration of wine ethanol to reduce the acetic acid. The resulting decrease in pH has undesirable effects on the product, including acid profile increased. Although this bacterium has been shown to reduce ethanol, is more common in the early stage of anaerobic fermentation. By A. aceti to be active in the steps below a certain amount of oxygen is usually required.
